In the Crock Pot: Chicken Noodle with Homemade Noodles

Here is a great meal to put in your Crock Pot (Slow Cooker) before you head out for the day and only takes an extra 30 minutes before you want to eat to finish it up.  Some of these ingredients were left over from the night before, so I was able to clean out the fridge!

In the Crock Pot:

Left Over Chicken (about 1 cup cut up)
3 Large Potatoes (skinned and diced)
1 Small Boiler Onion, diced
3/4 Kernal Corn (left over from night before)
1 cup carrots, cut into chunks
1 sm. can Chicken Broth
7 cups water
Salt and Pepper to taste

Cook on low for 6-8 hours

If you are short on time, you can use egg noodles and boil on the stove then add to your Crock Pot, or if you have 30 extra minutes, make some homemade noodles.  They are easy to make!

Slightly bead 2 eggs in a bowl.  Add 5 tbsp water.  Slowly work in 2 cups of flour until dough is stiff enough to roll out.

Roll dough on floured surface until thin.

Use a pizza cutter and cut into small strips.

Let dry for about 10 minutes.

Add to your Crock Pot and cook on high for about 15 minutes and enjoy your yummy soup!
