Triple Layer Mint Brownies

My daughter is enjoying baking with mommy in the kitchen.  I love teaching her how to use the kitchen utensils the right way and watching her show her passion for creating yumminess in the kitchen.  One of her favorite treats is created from this Triple Mint Brownie Recipe.  Although the recipe itself doesn't take long, the waiting for things to firm and cool can be a little hard to wait for, especially if you are a chocolate freak!

Bake a pan of brownies - you can either make a boxed version (which my daughter has been doing since it is more simple for her) or you can use this recipe:


2 squares of unsweetened chocolate
2 sticks of butter
4 eggs
2 cups of sugar
1 cup of flour
1 1/2 tsp vanilla

Melt the chocolate and butter in a double boiler. In a separate bowl, beat the eggs and mix in the sugar.  Fold the sugar mixture into the melted chocolate.  Add the flour and vanilla. Once combined, bake in a 13x9 pan at 350 degrees for 30-40 minutes. Let brownies cool completely.

For the Mint Layer you will need:

4 tbsp soft butter
2 tbsp milk
2 cups powdered sugar
1 tsp peppermint flavor
3-5 drops of green food coloring

Mix all ingredients together until nice and creamy.  Spread over the cooled brownies and let harden.  You can even toss it in the fridge to let it harden faster.

Finally, the top layer:

You will need 2 squares unsweetened chocolate
2 tbsp butter

Melt in the double boiler and then drizzle on top of the mint layer.  Use your finger or small spatula to spread evenly.  Set in fridge to harden/cool. Then slice and serve.  Makes about 50 small pieces.
