| DOUBLE CHOCOLATE MUFFINS | |
2 c. flour
1 c. unsweetened cocoa 1 c. sugar 1/2 tsp. salt 2 tsp. baking powder 1/2 tsp. baking soda 1 lg. egg 1 c. milk 1/2 c. butter, melted 1 1/2 c. mini chocolate chips
In large bowl combine flour, cocoa, sugar, salt, baking powder and baking soda.In medium bowl whisk egg, milk and melted butter.
Pour liquid ingredients into dry ingredients. Add chocolate chips. Stir until mixed. Fill greased and floured muffin cups 2/3 full with batter. Bake in preheated oven at 400°F about 20 minutes. Yield: 12 muffins | |
*I would suggest if you don't like really chocolatey things, cut back on the cocoa by 1/4 cup and add an additional 1/4 cup sugar. ;-)
