Peppermint Bark Recipe

Oh how I love holiday baking! This is one of my most devoured recipes:

Crushed Candy Canes (about 1 cup or 12-18 canes)
2 lbs. white chocolate
Peppermint flavor (optional)

Place unwrapped candy canes in a plastic bag and smash with a hammer or rolling pin to make 1/4 inch chunks.  Melt the chocolate in a double boiler. Combine the candy cane chunks with the chocolate (add peppermint flavor at this time if desired).  Pour mixture in to a cookie sheet layered with parchment, wax, or foil paper and place in the refrigerator until firm.  Remove from cookie sheet and break into pieces like you would peanut brittle).  Keeps for a couple weeks in a storage container. :-)
